EV3 Lessons - this series of programming lessons was developed by a FLL team in Pennsylvania. These excellent resources are linked in as Alterative or Primary Instructional Material in several STEM Robotics 101 lessons.

EV3 Programming Overview for FLL Coaches - is a well produced primer for EV3 intended for FLL Coaches. It provided an overview of EV3 hardware and EV3-G software, with an emphasis on the new features beyond NXT.

The LEGO MINDSTORMS EV3 Idea Book by Yoshihito Isogawa - is an excellent book by a LEGO master builder exploring simple machines and clever contraptions built with the EV3 kit. The book is written assuming one is using the commercial version of the EV3 kit, however most can be built with the Education kit (45544) and Expansions set (45560) - this link provides details on the builds possible with the education EV3 sets.
